For about a dozen pancakes. Allow 25 mins to prepare including 20 mins to stand.
125g 100% wholewheat flour
60g soya flour
1 tsp baking powder
salt to taste
125 ml soya milk & 125 ml water
45 ml oil
Put flours, baking powder & salt to taste into a bowl and mix thoroughly
Add the milk a little at a time and then the water,
stirring continuously until the mixture becomes smooth & creamy. For fritters keep the mix fairly thick. For pancakes, make it thinner: the thinner the mix the lighter the pancakes
Beat in the oil a little at a time with a whisk, a fork or an electric mixer. Allow to stand for 20 minutes before use. Fry, flip & enjoy.
Serve with squeezed lemon and/or maple syrup.
