Roasted Cauliflower with Garlic and Thyme
A delicious tapas-style starter, or side, or serve as a main with rice and veggie burgers. Serves 4.
1 large cauliflower, chopped into florets
2 tbsp olive oil
6 sprigs of thyme
4 cloves garlic, minced
Juice of a lemon (and zest if desired)
Salt and pepper
Preheat the oven to 200 degrees.
In a large bowl, combine the cauliflower, olive oil, thyme, garlic and lemon juice. Mix together and spread out on a roasting tin.
Roast for 25-30 minutes, until tender and slightly browned.
