Easy and quick way to enjoy this lesser-known but lovely vegetable.
1 bunch mint
1 bunch coriander
2 lemons, juiced
A handful of dried sea vegetable (soaked for 10 mins )
Grate the kohl rabi and put into a salad bowl. Whizz the coriander, mint and lemon juice until smooth.
Pour the dressing over the kohl rabi and mix well. Chop up the soaked sea vegetables and stir into salad mix.
Best served chilled and as a simple delicious side salad.
