The best way to eat your greens - feel free to use kale, savoy cabbage, pak choi or another green instead of spinach. Serve with tofu and rice to make this a whole meal.
500g spinach, rinsed and chopped
1 onion, chopped, and 2 cloves garlic, minced
A good pinch chill flakes
1 Tblsp toasted sesame oil
1-2 Tblsp lime juice
1-2 Tblsp soy sauce
Sauté onions to brown. Add garlic, cook 2mins, then add spinach. Wilt. Add chilli flakes, sesame oil, soy sauce; adjust to taste. Drizzle with lime and serve with rice with tofu.
