Gluten Free. Makes 24. Flavour as desired! E.g. Coconut and Lemon, Orange and Chocolate, or Cinnamon Raisin.
2 cups Fava Bean flour
2 tsp Baking Powder
½ cup Coconut Oil
1 cup Brown Rice Syrup
2 tsp Vanilla Extract
Extras: Lemon Zest, Desiccated Coconut, Orange Oil, Chocolate Chips, Cinnamon, Ginger, Raisins
Preheat your Oven to 350’F/175’C (155’C fan). Whisk together the dry ingredients in a large bowl. In a small saucepan, gently heat the coconut oil and rice syrup until nice and runny, then stir through the vanilla. Add to the dry ingredients and stir through. Pick and choose any extras you’d like to add and mix well! Put 2 tbsp dollops onto 2 lined baking sheets and bake for 14-16 minutes. Allow to cool slightly before moving to a wire rack. Enjoy!
