Now this is really quick to make...
2 red onions
2 celery sticks
Tin of mixed beans
3 Tblsp olive oil
1 Tblsp vinegar (cider or basalmic or a mixture)
Good pinch salt
Finely shred red onions, celery sticks & parsley (without the stalks). Mix with beans.
Mix oil, vinegar and salt together and dress. Serve with a leafy salad
