This compliments the Cauliflower Koftas really nicely!
Ingredients
- A couple of small red onions
- A thumbnail of ginger
- ½ chilli
- 2 cloves of garlic
- ½ tsp turmeric
- ¼ tsp black onion seeds
- 1 tsp cumin & coriander
- 1 tin plum tomatoes
Instructions
- Fry everything until soft, adding a tin of plum tomatoes and the same amount of cold water. Add a teaspoon of salt and cook for an hour, simmering and allowing the mixture to reduce.
- Take off the heat and add ½ a block of creamed coconut. Stir it when back on the heat, whizzing it to make it smooth.
- Add the juice of a lemon if required.
