Couscous is one of the quickest, easiest things you'll ever cook – just boil 1 ¼ parts liquid for 1 part couscous, pour it over the grain and let stand till fluffy. Use bulgur instead with a ratio of 2 (liquid) to 1 (grain).
Ingredients
- 200 ml veg stock
- 1 tsp cinnamon
- 0.5 g ground coriander
- 250 g couscous
- 75 g raisins
- 2 tomatoes chopped
- ½ bunch each parsley & mint or herbs of choice, chopped
- 1 garlic clove crushed
- 4 Tbsp olive oil
- salt & pepper
- 200 ml orange juice
Instructions
- Combine liquid, spices and ½ tsp salt and bring to a boil. Add couscous, remove from heat & cover for 10 minutes.
- Mix together remaining ingredients, add couscous and season to taste. Serve warm or at room temperature.
