One member of staff cooks up this simple recipe to give to her family at Christmas in little glass jars with a ribbon. Or, if you omit everything but the apples and water, applesauce is a great egg replacer in cakes or banana bread. Feel free to double or quadruple these quantities!
Ingredients
- 4 cooking apples peeled cored and roughly chopped
- Splash of Lemon juice
- Splash of Maple syrup optional
- Pinch of cinnamon or allspice
Instructions
- Place the roughly chopped apples into a saucepan with enough water to just cover them. Simmer gently stirring occasionally until the apples reduce and become mushy. Add cinnamon or mixed spice, a splash of lemon juice (and maple syrup if using). Mash with a fork or pop into a blender for a smoother consistency. Spoon into sterilised jars if you're not going to eat it all straightaway!
