Cranberry & Chocolate Tiffin

This recipe is so easy to make (if you fancy more of a challenge, see overleaf!) and endlessly adaptable. Experiment with different dried fruits or nuts, and other spices or flavourings instead of (or alongside) the orange. It also scales up easily for sharing or freezing. Enjoy!
Ingredients
- 150 g chocolate
- 50 g Vegan Block or similar
- 40 g rice syrup
- 200 g Doves Farm digestive biscuits
- 50 g dried cranberries chopped
- 1 tsp orange extract
Instructions
- Melt the Vegan Block and syrup together in a medium-sized saucepan over low heat.
- Break the chocolate into pieces, add to the saucepan and turn off the heat. Stir until the chocolate melts.
- Crush biscuits with a rolling pin, or in a food processor.
- Mix cranberries, orange extract and crushed biscuits into the melted chocolate mixture.
- Press into a 20x20cm tray lined with baking paper.
- Refrigerate until set, then cut into bite-sized pieces.
