A moist, just-sweet-enough, apple bread, perfect with a bit of marg and a cup of tea any time of day.
Ingredients
- 260 g wholemeal flour
- ½ tsp ground nutmeg
- ½ tsp ground ginger
- ¼ tsp ground allspice
- 1 tsp cinnamon
- 1 ¼ tsp bicarb of soda
- 1 ¼ tsp baking soda
- Pinch salt
- 70 g sweet freedom or other syrup
- ½ tsp vanilla
- 250 g apple puree
- 250 g grated apple 2-3 apples
- 60 g chopped walnuts
Topping:
- chopped walnuts, thin apple slices, ½ tsp cinnamon
Instructions
- Preheat oven to 170C, and oil grease a large loaf tin. Mix dry ingredients together (except walnuts). Mix wet ingredients together well. Combine but do not overmix. Loosen with a bit of soya milk only if needed (up to 50ml). Fold in apples and walnuts. Pour into tin, top as desired. Bake 40-45min, until toothpick comes out clean.
