A raw “cake,” easy to make but you’ll need a food processor.
Ingredients
For the cake:
- 150 g apple cored and roughly chopped
- 230 g walnuts
- 165 g raisins
- 45 g desiccated coconut
- 2 Tbsp syrup
- 1 tsp vanilla
- 1 ½ tsp cinnamon
For the icing:
- 115 g cashews
- 2 Tbsp syrup
- 1 tsp vanilla essence
- 1 tsp water
Instructions
- Briefly process apple to make small chunks. Add other cake ingredients and process briefly and slowly, stopping when you can still see small chunks. Do not over process. Press down into square dish.
- Blend all icing ingredients on high until smooth. Ice cake. Refrigerate for 2 hours before cutting and serving. Keeps well in the fridge for 4 days.
