Perfect for Summer!
Ingredients
- 1 tin Essential Jackfruit
- 1 onion finely chopped
- 2 cloves garlic minced
- 1 chilli finely chopped
- 1 tsp olive oil
- 1 tbsp smoked paprika
- 1 tin chopped tomatoes
- 2 tbsp tomato puree
- 125 ml water
- 60 ml maple syrup
- 60 ml molasses
- Salt and pepper
- Procedure
Instructions
- Drain the jackfruit, chop off the stems and remove the seeds. Rub the jackfruit between your hands until it breaks apart and becomes stringy.
- Put to one side.
- Fry off the onions and garlic in the olive oil for a few minutes until browned.
- Add the smoked paprika and fry for a further minute or two.
- Add the chopped tomatoes, puree, water, maple syrup and molasses and cook through for 15 minutes or so. Season with salt and pepper.
- Add the jackfruit and cook on a low heat for 20 minutes.
- Serve in wraps or rolls with coleslaw and salad
