Cauliflower & Peanut Soup
A delicious soup. Not to worry if you don’t have all the ingredients, improvise.
Ingredients
- 1 onion
- 1 leek
- 3 to 4 sticks of celery
- 1 small fennel
- 1 tsp turmeric
- 2 tsp ground ginger
- 2 tsp whole coriander
- 1 tsp whole cumin
- 2 to 3 cloves of garlic
- 1 red chilli whole
- 6 small potatoes
- 1 litre vegetable stock e.g. bouillon
- A tin of coconut milk
- 250 g of roasted peanuts
- 1 cauliflower
Instructions
- Chop the onion, chilli, celery, fennel & leek and fry in a couple of tablespoons of oil until soft. Add all the spices, giving everything a good old stir to let the spices infuse.
- Add the peanuts, mixing well, then the chopped up potatoes and stock. Bring to the boil and simmer on a low heat until the potatoes are cooked. Whizz with a blender until smooth, then add the coconut milk. Season accordingly.
