Gazpacho is the perfect recipe for using up late summer produce.
Ingredients
- 1/2 kg tomatoes cut into chunks
- 1 cucumber peeled and chopped into chunks
- 3 slices stale bread cubed
- 1/4 cup olive oil
- 2 tbsp sherry vinegar
- 2 cloves garlic
- salt and pepper
Instructions
- Combine all ingredients in a blender (except for salt & pepper). Process until smooth adding water if needed. Season with salt & pepper.
