Vanilla Cheesecake
A decadent gluten-free dessert. No-bake and simple to make.
Ingredients
Base
- 1 cup pitted soft dates
- 2 cups raw walnuts
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
- Half vanilla pod
- Pinch of salt
Filling
- 4 cups cashews soaked overnight
- 2/3 cups coconut oil melted
- 1/2 cups maple syrup
- 1/4 cup coconut cream
- 2 vanilla pods
Instructions
- Blend all base ingredients in a food processor
- Press the pie dough in a 9-inch springform pan
- Place it into the refrigerator until the filling is ready
- Rinse the food processor and blend all the filling ingredients
- When the filling is smooth, take you springform pan out of the fridge and fill. Smooth the top as much as you can, cover it with foil and place it in the freezer for at least 6 hours.
- Transfer to the fridge until are ready to eat it.
- Serve topped with fresh fruit or compote if desired. Enjoy!
