For about a dozen pancakes. Allow 25 mins to prepare including 20 mins to stand.
Ingredients
- 125 g 100% wholewheat flour
- 60 g soya flour
- 1 tsp baking powder
- 125 ml soya milk
- 125 ml water
- 45 ml oil
- salt to taste
Instructions
- Put flours, baking powder & salt to taste into a bowl and mix thoroughly
- Add the milk a little at a time and then the water,
- stirring continuously until the mixture becomes smooth & creamy. For fritters keep the mix fairly thick. For pancakes, make it thinner: the thinner the mix the lighter the pancakes
- Beat in the oil a little at a time with a whisk, a fork or an electric mixer. Allow to stand for 20 minutes before use. Fry, flip & enjoy.
Notes
Serve with squeezed lemon and/or maple syrup.
