Chilli cucumbers

A tasty snack or starter. Adapted from Emma Sorrell.

Ingredients
  

  • 1 cucumber chopped into bite size chunks
  • 50-70 g cashews can be toasted, or try the black pepper ones!, chopped
  • 1 tsp chilli paste or flakes
  • 1 1/2 tbsp soy sauce
  • 1 tbsp peanut butter Optional

Instructions
 

  • Mix together all ingredients and top with sesame seeds if desired. Enjoy!
